If you are looking to improve on your cooking skills, a refresher course in the basics can be a great investment of your time. But if you are too busy for that, the following tips can help you get back to some cooking basics that you may have forgotten or overlooked.

To make a soup or stew that is almost fat free, begin your recipe with a fat-free broth or soup stock. Use a lot of vegetables and lean meat to help to keep the soup low in fat. When the soup is ready to eat, place the soup in the refrigerator and let chill. The rest of the fat in the soup will rise and congeal on top. You can then remove the hardened fat and discard. You will save approximately 100 calories for each tablespoon removed.

A quick way to stop your fruits and vegetables from browning before using. When the air hits a freshly peeled apple or potato, the fruit or vegetable will begin to turn brown. Placing the freshly peeled fruit or vegetable in a bath of cold lightly salted water will help the fruit or vegetable retain its color.

Throw a hassle-free dinner party. If you have company coming for dinner, cook a signature dish that you are comfortable preparing. This way you won’t have any disasters in the kitchen. Prepare as much as you can in advance, so that you can spend time with your guests prior to eating.

Never try a new recipe or any type of new ingredient when cooking for someone that you want to impress. You don’t want to get it wrong when the stakes are important. If your boss is coming to your dinner party, play it safe by making something that you already know will be fabulous.

To get extra moist chocolate chip cookies, add a packet of dried vanilla pudding mix to any recipe. You do not have to add the other ingredients for the pudding recipe or even add extra moisture to your existing recipe. Simply adding the powdered mix helps the cookies to attain a smoother, softer texture.

Splurge a little on a higher quality of olive oil than you usually buy. A tiny splash of a good olive oil can really enhance the flavors of some foods like meat, fish, pasta, pizza and some cheeses. You can also use it in place of butter when you cook pasta or mushrooms, and you will have a healthier dish.

Do not feel as though you must follow every recipe to the letter. While cook times and techniques are less flexible, you can often leave out ingredients that you don’t like, especially spices or other non-essential ingredients. You can also add ingredients that you think will be more pleasing to your or your family’s palates.

Cooking the daily meal can seem like a chore sometimes, and throwing ingredients together quickly becomes tiresome. Cooking for pleasure can be relaxing, entertaining, and can be delicious. Remind yourself of some of the basic rules of cooking, and make cooking fun again for you and your family.
